Our history is as rich as our taste and we make sure to deliver that richness in each and every way.
A moniker given by the matriarch of owner Nichole Johnson’s lineage, Hazel Lee Brown made sure to be very particular in who she let into her inner circle and in doing so, would call those special ones “Rusty Rabbit”.
Lapin Rouillé came to fruition to not only deliver luxury bubbly to the market, but to celebrate the strong and determined women of Nichole Johnson’s family who have each personally battled cancer.
With cancer being such a prevalent source of pain in the family, we turned our grapes into bubbly and founded the organization, Rusty Rabbit Cares.
OUR CHAMPAGNE HAS A BIGGER MISSION THAN TO DELIVER A LUXURIOUS TASTE AND FEEL TO THE MARKET. OUR MISSION AND MOTIVE IS TO ADVOCATE FOR MINORITY WOMEN BATTLING CANCER AND SPEAK UP ABOUT THIS HORRIBLE DISEASE THROUGH THIS ORGANIZATION.

THE SOURCE OF OUR PASSION
family owned, the vineyard that is the birthplace of Lapin Rouillé runs over only 8 hectares (19 acres), in and around the village of Pouillon, one of a small collection of villages north west of Reims, the city of sparkle at the heart of the Champagne region.
Being the northern-most part of the appellation, the climate can be testing for the farmers, especially in the colder months. So the late-budding Pinot Meunier vine is better suited to this area, producing its distinctive crop, where some of the more well-known varieties (Pinot Noir and Chardonnay, for example) sometimes struggle.
the family has been farming the vineyard organically (with its formal certification due in the coming months) and favours low-yield root stock vines, to improve the quality of the grapes he harvests. they allow natural grasses to grow between the vine rows, which further limits the yield.

Cuvées
Immerse yourself in Lapin Rouillé Champagne. Our inaugural cuvée is made in the traditional brut style, using only hand-harvested Pinot Meunier grapes from a small single estate producer near the city of Reims in La Belle France.
100% Pinot Meunier champagne is celebrated for its light, dry and floral flavors. And Lapin Rouillé is no exception. Our champagne follows in the footsteps (or pawprints) of preeminent cuvées from the likes of Billecart-Salmon, Laherte and Egly-Ouriet.
